From fertilized flower to fruit

After flowering followed by fertilization, we are now in the phase of fruit set, initial phase of fruit formation…the ovary turns into fruit following fertilization. Fruit set is manifested by the gradual hardening of the core of the fruit. The pulp of the fruit, called "drupe" becomes fleshy.

Olive fruit set takes place at the beginning of summer, end of June, beginning of July, and of course depends on weather conditions.

Fruit set begins about two weeks after flowering. The first fruits fall, those from unfertilized flowers. Two weeks later another drop of fruit, a natural thinning phenomenon, leading to stable fruit set about 6 weeks after full bloom. If other fruits then fall, it is due to food or water shortages or even parasitic attacks.

The very green olives appear and will ripen until winter...
