On the nose, on the palate, the ardor, the bitterness, the fruitiness... we explain to you below how to taste an olive oil.

First of all, try to discover the aromatic notes of the oil you are tasting on the nose by identifying the dominant odors and then the secondary aromas. 

Then taste the oil, taking in some air with it to ventilate it. Identify the dominant and secondary aromas.

By tasting it you will pay attention to the bitterness of the oil (which is not a negative attribute), to the pungency (the sensation of spiciness in the mouth) and the fruitiness (aromatic notes of fruit).  

A misconception is to rely on the color of the oil. Do not pay attention to the color of this fruit juice because it is only on the nose and in the mouth that the tasting is done. 

You can taste the olive oils with a spoon or on bread, a real moment of pleasure! Remember that olive oil is a fruit juice and can therefore be enjoyed without necessarily accompanying another food.
