The aromatic notes of olive oils from different varieties of olive from France
Picholine, Aglandau, Bouteillan, Négrette, each variety of olive will give an olive oil with its own aromas, flavors and perfumes
Each of the olive varieties has its own taste and therefore will give a different olive oil from other olive varieties. Just like the different varieties of apples or pears.
Our four monovarietal oils each bear the name of the variety from which they come: Picholine, Aglandau, Bouteillan and Négrette.
Our fifth oil, called blended oil, Goût à l'ancienne, is mainly made from Picholine olives.
Here is a short version of the aromatic notes of the oils from these four varieties of olive that we use to produce our olive oils, all from olive trees in the Gard.
The Picholine
On the nose you will discover notes of greenery, in the mouth, notes of plum, strawberry and vanilla
The Negrette
On the nose and in the mouth, aromas of tomato, artichoke or apple and hazelnut (depending on maturity) will stand out.
L'Aglandau
On the nose notes of greenery predominate, and in the mouth it is aromas of artichokes, green banana which will characterize Aglandau olive oil.
The Bouteillan
On the nose intense notes of grass dominate, and in the mouth it is characterized by aromas of greenery, pear and banana.
