What are the aromas and particularities of a "ripe fruity" olive oil?

Ripe fruitiness characterizes olive oils produced with ripe olives and with a short “harvest-extraction” time. These oils are often softer and rounder in the mouth than green fruity type olive oils. You will find aromas of apple, pineapple, plum, red fruits, tomato, almond, hazelnut, blackberry.

Green fruity or ripe fruity?

The green fruitiness and ripe fruitiness are characterized by a vegetable feeling characteristic in young oils. The boundary between these two categories of olive oils is quite arbitrary. Indeed, there is a relationship between the fruitiness and the ripeness of the olives, which unfolds gradually and continuously. There is therefore a continuity between the green fruitiness and the ripe fruitiness. All levels are possible and many olive oils are located in a border situation.
