The olive tree is a plant species called " rustic » : It is very tolerant to drought because its water needs are very low and it adapts very well to various poor soils and uneven reliefs. This also explains its expansion in the Mediterranean basin. 

The olive tree can be considered a environmental protector

Its presence in areas with uneven relief as well as its robust and important root system, fix the soil and thus fight against erosion and desertification

Thanks to its dense and persistent foliage through the four seasons, it has a high CO2 absorption capacity. It is thus called a "carbon sink".

Sa wide foliage reduces the intensity of torrential rains, promoting runoff and infiltration of water into the soil. He participates in the fight against erosion

Finally, the olive tree has a very low water footprint. because it requires very little water to be fully productive and preserves this scarce resource in some areas.
