Le dark fruity is a type of fruitiness characteristic of oils whose elaboration (based on matured olives) includes a phase of fermentation of the olives under very specific conditions.

Any trace of fermentation constituting, vis-à-vis European regulations, an organoleptic defect, dark fruity type oils are classified as “virgin” and not “extra virgin”. However, this should in no way prejudge their quality!

L'olive oil Oliv&sens Old-fashioned taste is a so-called 'black fruity' olive oil; an olive oil revealing aromas of black tapenade, cocoa, prune, sweet and with little bitterness.
