Growing olives

After the fruit set which began in June, when the fruits (the olives) appear as small grains, here we are in July at the phase of enlargement of the fruit...

The olive is taking shape, the core is being built, the olives are a beautiful apple green! The olives will continue to grow until September or October (depending on the variety).

The appearance of oil in the olive (what is called lipogenesis) takes place during the month of August.
