Green olives, black olives
There are no two varieties of olives, green and black. Everything depends on the maturity of the olives.
Indeed, green olives turn black (or almost, tending towards purple, red, brown) when they ripen. This transition from one color to another is called veraison.
Have you ever tasted a green olive straight from the tree?
It will not be good until it undergoes a treatment to debitter it. This treatment consists of eliminating the bitter organic acid that the olives contain.
