Summer recipe: lemon zest and olive oil ice cream
An original recipe for the summer heat
Ingredients (for one liter of ice cream)
- 50 cl of whole milk
- 25 cl liquid cream
- 1 gousse de vanille
- 1 lemon (preferably organic)
- 5 egg yolks
- 180 g powdered sugar
- 8 tablespoons ofolive oil Oliv&sens Aglandau
Prep time
Cut the vanilla pod lengthwise and collect the seeds.
Grate the lemon to remove the zest.
Heat the milk, cream, vanilla pod, seeds and lemon zest. As soon as the mixture begins to boil, remove it from the heat.
Put the egg yolks with the sugar in a dish and mix everything until the mixture whitens.
Pour the milk and cream preparation into the egg-sugar mixture while whisking and put everything back on very low heat for about 10 minutes.
Let it cool down and then pour in Aglandau olive oil stirring gently.
Let cool completely, then freeze.
