Galette des rois recipe: apple, pear and olive oil

Kings Day, January 6, is celebrated with a good galette! and ours is with apple, pear and Oliv&sens olive oil! For baking, we favor our monovarietal Aglandau olive oil. It is therefore the Aglandau which has the privilege of flavoring our Oliv&sens galette!

Ingredients

• 2 rolls of puff pastry
• 2 apples
• 3 pears
• 1 sachet of vanilla sugar
• 50 g powdered sugar or caster sugar
• 4 tsp. at s. ofmonovarietal olive oil Oliv&sens Aglandau
• 150 g ground almonds
• 2 eggs
• 1 egg yolk
• 1 bean

Prep time

• Peel the apples and pears and cut them into thin slices. Arrange them in a salad bowl, sprinkle with sugar and vanilla sugar and add 1 tablespoon ofolive oil Oliv&sens Aglandau. Mix the ingredients to coat the whole with Oliv&sens Aglandau olive oil and sugar and leave to stand. Meanwhile, mix the ground almonds with two eggs and a tablespoon ofolive oil Oliv&sens Aglandau.
• On a baking sheet, spread a puff pastry and prick it with a fork. Distribute the fruits and their apple-pear juice and their juice. Add the ground almonds/eggs/olive oil mixture on top. Do not forget to place the bean! Wet the edge of the dough then cover with the second dough, seal the edges well.
• Preheat the oven to 180°C. Decorate the pastry with the tip of a knife, taking care not to pierce it. Mix an egg yolk with a tablespoon ofolive oil Oliv&sens Aglandau and brush the galette with this mixture.
  Bake for 30 minutes until the pastry is golden brown.

The galette can be eaten warm or cold and is accompanied by a bowl of cider... good tasting!
