Tomato tart recipe with Négrette olive oil
Summer is the height of tomato season, let's take advantage of it to make a good pie!
Ingredients
For the pie dough
- 200 g flour
- 100 mlolive oil Oliv&sens Négrette
- A teaspoon of salt
- A teaspoon of baking powder
- Half a glass of water
- An egg yolk
[Note: To make a sweet pie you can follow the same recipe by changing the olive oil used, Aglandau olive oil will lend itself very well. For a meat or mushroom pie, choose Old Fashioned Taste olive oil instead.]
For garnish
- 2 beautiful onions
- A dozen tomatoes
- A sprig of rosemary
- A sprig of thyme
- salt pepper
- 2 tablespoons ofolive oil Oliv&sens Négrette
Prep time
For the dough
In a mixing bowl, mix with your fingers the flour, the yeast, the egg yolk and theolive oil Oliv&sens Négrette. Add the salt and half a glass of water.
Knead the dough until you get a ball that no longer sticks.
Let it cool in the fridge while you prepare the filling.
For garnish
Cut the onions into small dice. Heat a frying pan and add two tablespoons ofNegrette olive oil. Brown the onions over medium heat, then when they have melted, add three tomatoes cut into small cubes. Cook everything until you get a puree of tomatoes.
The other tomatoes, cut them into nice quarters, they will be used to decorate the pie.
Preheat your oven to 200°C.
Roll out your pie dough and arrange it in a previously oiled pie pan (or put a baking sheet in the bottom of your pie dish). Prick the dough with a fork and place the onion/tomato mixture on top and then the tomato quarters.
Finish by spreading the thyme and rosemary, salt and pepper over the pie. If you don't have rosemary or thyme, you can also use a mix of Provencal herbs.
Put in the oven and cook at 200°C for a good half hour. Watch the cooking because one oven is not the other. The pastry should be golden and the tomatoes cooked.
You can eat it hot, warm or cold, it is delicious at any temperature! Before serving add a drizzle of olive oil, it will only be better!
