Oliv&sens Goût à l'ancienne olive oil is the fruit of a blend of olives (mostly olives of the Picholine variety) picked when fully ripe.

After being picked, the olives are left to ferment for 4 to 8 days in anaerobic conditions (absence of oxygen) causing the olive oil to lose its ardor by breaking its vegetal notes, giving rounder aromas, a milder olive oil, with flavors of cocoa, vanilla, black tapenade.


This stage of fermentation which follows the picking makes it lose the qualifier 'Extra' in the name 'Extra Virgin olive oil' because only the olive oils which are triturated following the picking can carry this qualifier.

Our other olive oils (Picholine, Bouteillan, Aglandau and Négrette) do not undergo this fermentation process and therefore differ from Old fashioned taste by more vegetal notes, more ardor and bitterness.

While it is made from olives of the same variety, theOld fashioned taste olive oil differs very clearly, in terms of aromas and fragrances, from Picholine olive oil. This is due to the later harvesting of the olives and the fermentation process before trituration.
