A monovarietal olive oil is an oil made from a single variety of olives. A blended olive oil, on the contrary, comes from a mixture of several varieties of olives.

Each monovarietal olive oil highlights the typicality of the fruit from which it comes and offers a different set of aromas depending on the variety of olives used.

By tasting a monovarietal oil, you will discover the aromas, fragrances, color and subtlety in the mouth specific to its variety of olives. One or the other will undoubtedly please you more, just as you prefer this or that grape variety. It is important to taste to find out which varieties of olives are best for you.

A monovarietal olive oil represents a terroir, the discovery of the typical aromas of a variety of olives.

Blended olive oil

A blended olive oil is the result of the work of the master miller who selects certain varieties of olives according to their maturity, their terroir, their properties and aromas to compose a unique oil.

It's about calibrating with precision to achieve a balance of character, flavor, aroma and fragrance. We talk about blending in the world of wine, but also in that of olive oil. The art of blending requires training in tasting and years of practice.
